8- to 9-oz pkg refrigerated cheese tortellini
About 50 salami slices
About 50 cubes of sharp white Cheddar
1 bottle Italian salad dressing
1 6-oz can or jar of medium olives, green, black, pimiento stuffed, kalamataor a combination
Cook the tortellini according to the package directions, being careful not to overcook. Drain and let cool on the counter for about 10 minutes before placing them in a large zip-top bag or bowl. Dump the entire bottle of Italian dressing in with the tortellini and marinate for at least 2 hours (or overnight) in the refrigerator.
On each toothpick, thread the tortellini, salami, cheese slices and olives in any order. Arrange the skewers on a platter and store in refrigerator or serve immediately.
Note: This also makes a great cold pasta salad by combining all ingredients together in a bowl. Add in things like chopped red bell pepper, cherry tomatoes, artichoke hearts or grated Parmesan cheese. If serving mostly adults, a spicy salami is the way to go. Makes about 50 mini skewers.
